Homemade Tortillas

Flour, fat, salt, water. That's really all this is. And yet most store-bought tortillas (even the better-for-you-versions) are packed with stuff like sunflower oil and xanthan gum that have no business being in there. Give the dough thirty minutes to rest and you've got warm, soft tortillas that make everything taste better. That's the whole entire life.

Ingredients

  • 2.5 cups all-purpose flour

  • ½ teaspoons baking powder

  • 1 teaspoons salt

  • ⅓ cups lard, butter, or avocado oil (I’ve used beef tallow and avocado oil before)

  • 1 cups hot water

Instructions

  1. Mix oil, baking powder, salt and flour until it looks like crumbs

  2. Add hot water little by little, do NOT just dump it in

  3. Keep massaging the dough, if it’s sticky it’s not ready yet…keep going

  4. Flour your surface and divide the dough into 16 small sections, even smaller if you want smaller tortillas

  5. Roll into balls, use palm to flatten

  6. Rest for 30-40 min, cover

  7. Roll out with a rolling pin. Always roll from the middle then out. Perfect circles are not necessary, use your hands to stretch them out a bit.

  8. Heat a cast iron skillet or griddle, place the tortilla on and cook for under 1 min or until bubbles start to show. Flip once and enjoy.
