No-bake Protein Balls

This is my go-to when I need something grab-and-go that's actually made with real ingredients. Five minutes of mixing, a half hour in the fridge, and you've got snacks for the whole week. Simple, intentional, and genuinely delicious. That's the whole entire point.

Ingredients

  • 1 cup organic sprouted rolled oats

  • ½ cup peanut butter (or almond butter)

  • ⅓ cup honey

  • ½ cup mini dark chocolate chips (at least 70%)

  • ½ cup protein powder (or omit if you don’t have it)

  • ¼ cup flaxseed meal

  • ¼ cup chia seeds

  • ½ tsp vanilla extract

  • ½ tsp coconut extract

Instructions

  1. Mix all ingredients in a bowl until well combined.

  2. Roll into 1-inch balls.

  3. Refrigerate for 30 minutes.

  4. Store in an airtight container for up to 1 week.
